Butter beans in smokey tomato salsa
Description
Not sure how to eat a Mediterranean diet? Eat more legumes (in place of meat) cooked in tomato sofrito sauce. I made this super easy Greek butter bean dish using canned butter beans.

Sauté onion and garlic.

Add zucchini, capsicum, water and stock cube and simmer until soft.

Add pasta sauce, herbs, paprika and simmer for 5 minutes.

Add butter beans & pour into a baking dish. Sprinkle with fetta and bake in oven 180 degrees for 15-20 min or until excess water has evaporated.
