Butter beans in tomato salsa

Ingredients
  • 1 can Butter beans (rinsed, drained)
  • 300 grams Cherry tomato pasta sauce (eg. Sacla)
  • 1 Onion (diced)
  • 3 cloves Garlic (crushed)
  • 1/2 Capsicum (diced)
  • 1 Zucchini (thinly sliced)
  • 1/2 teaspoon Rosemary & Oregano
  • 1 teaspoon Dill (chopped)
  • 1 Stock cube
  • 200 milliliters Water
  • 4 tablespoons EV Olive Oil
  • Fetta Cheese
Method
  1. Saute onion and garlic.
  2. Add zucchini, capsicum, water and stock cube and simmer until soft.
  3. Add tomato and herbs, simmer for 5 minutes.
  4. Add butter bean & pour into a baking dish.
  5. Sprinkle with fetta and bake in oven 180degrees for 15-20 min

    or until excess water has evaporated. 

    Eat alone or with sardines.
