Lentil & Grain salad

Ingredient
  • 1 can drained lentils
  • 1/2 can drained chickpeas
  • 1 can boiled pearl couscous or barley or brown/black rice or buckwheat
  • 1 carrot grated
  • 2 tablespoons pepitas
  • 2 tablespoons currants
  • 2 tablespoons each, chopped coriander, parsley and mint
  • 1 tablespoon chopped fresh rosemary or 1 tsp dried rosemary
  • 2 spring onions diced
  • Dressing (half lemon squeezed, 1 tbs honey, ¼ cup EV olive oil, salt)
  • Almond flakes sprinkled on top after dressing (optional)
  • Serve with ½ cup Chobani plain yoghurt mixed with ½ tsp cumin powder and ½ tsp honey

  1. Combine all salad ingredients

  2. Add dressing to salad and sprinkle with almond flakes
