can drained lentils
1/2
can drained chickpeas
1
can boiled pearl couscous or barley or brown/black rice or buckwheat
1
carrot grated
2
tablespoons pepitas
2
tablespoons currants
2
tablespoons each, chopped coriander, parsley and mint
1
tablespoon chopped fresh rosemary or 1 tsp dried rosemary
2
spring onions diced
Dressing
(half lemon squeezed, 1 tbs honey, ¼ cup EV olive oil, salt)
Almond flakes sprinkled on top after dressing (optional)
Serve with ½ cup Chobani plain yoghurt mixed with ½ tsp cumin powder and ½ tsp honey
Directions
Combine all salad ingredients
Add dressing to salad and sprinkle with almond flakes
