Ingredients: 1 can drained lentils; 1/2 can drained chickpeas; 1 can boiled pearl couscous or barley or brown/black rice or buckwheat; 1 carrot grated; 2 tbsp pepitas; 2 tbsp currants; 2 tbsp each, chopped coriander, parsley and mint; 1 tbsp chopped fresh rosemary or 1 tsp dried rosemary; 2 spring onions diced; Dressing; Almond flakes sprinkled on top after dressing (optional); Serve with ½ cup Chobani plain yoghurt mixed with ½ tsp cumin powder and ½ tsp honey

¹⁄₂ can drained chickpeas
