Lentil soup

My delicious simple Greek lentil soup.
Ingredients
3/4
cups
French lentils
((tastiest in my opinion))
1
Large onion
(grated)
3
cloves
garlic
(crushed)
1
large carrot
(grated)
1
teaspoon
dried oregano
((from Greece, tastes amazing))
1
teaspoon
dried rosemary
1
teaspoon
ground coriander seed
(or paprika)
2
bay leaves
3
teaspoons
tomato paste
1/4
cup
extra virgin olive oil
3
liters
water
2
masse stock cubes
((I used beef style flavour))
Method
Saute onion and garlic in olive oil until fragrant, then add carrot, optional other vegetables & lentils and saute for 10min.
Add water and bring to a simmer, then add herbs and spice.
After 1 hour of simmering add tomato paste and stock cubes (if these are added too early it can toughen the lentils).
Simmer for another hour until lentils are soft and soup is thick.
Check the soup and stir regularly to avoid lentils sticking to pot. If the soup is too thick add more hot water.
Serve with a drizzle of balsamic vinegar, fetta and olives.
