My delicious simple Greek lentil soup.
Saute onion and garlic in olive oil until fragrant, then add carrot, optional other vegetables & lentils and saute for 10min.
Add water and bring to a simmer, then add herbs and spice.
After 1 hour of simmering add tomato paste and stock cubes (if these are added too early it can toughen the lentils).
Simmer for another hour until lentils are soft and soup is thick.Check the soup and stir regularly to avoid lentils sticking to pot. If the soup is too thick add more hot water.
Serve with a drizzle of balsamic vinegar, fetta and olives.
