Savoury lupin pancake

Description

My easy lupin pancake with mushrooms and spinach for dinner.
Under 200 calories..15g protein, 5g carbs. Perfect on "fasting" day on 5:2 diet. 

It is satisfying and nutritious, diabetes friendly and keto friendly.

Lupin is a low carb legume shown to be particularly good for people with diabetes and for weight management.

Ingredients
  • 1 tablespoon lupin clour
  • 1 tablespoon very thick plain strained yoghurt (eg. chobani. don't use runny yoghurt as it will make the pancake too soft)
  • 1 tablespoon parmesan
  • 1 egg
  • 1/2 teaspoon rosemary
  • salt & pepper
Instructions
  1. Combine ingredients.
  2. Spray a frying pan with a little oil & pour batter in.
  3. Cook a few minutes on each side on low heat and serve with sauteed mushrooms and spinach.
