Falafel are so easy and tasty and a great way to eat legumes. Each falafel has about 5g plant protein!
Soak 1 cup chickpeas overnight in 500ml water.
Drain water and blend raw chickpeas until they are a paste. Put aside.
Blend 1 onion, 5 garlic cloves, handful of parsley, dill, coriander, 1 tsp cumin, 1 tsp ground coriander seeds, 1tsp chili flakes.
Add chickpea paste and combine well.
- If mixture is too dry add a little oil (avoid adding liquid).
- If it's too wet add a little wheat/lupin flour.
Add salt and pepper.
Before deep frying, mix through half tsp bicarb soda to make them fluffy. Use extra virgin olive oil for frying.
