boiled pearl couscous or barley or brown/black rice or buckwheat

carrot grated

pepitas

currants

each, chopped coriander, parsley and mint

tbsp
chopped fresh rosemary or 1 tsp dried rosemary

spring onions diced
Dressing
(half lemon squeezed, 1 tbs honey, ¼ cup EV olive oil, salt)
Almond flakes sprinkled on top after dressing (optional)
Serve with ½ cup Chobani plain yoghurt mixed with ½ tsp cumin powder and ½ tsp honey
Directions
Combine all salad ingredients
Add dressing to salad and sprinkle with almond flakes
