My roast zucchini, potatoes and pumpkin in tomato salsa. Looks so beautiful. So easy and tasty. In Greek it's called "Briam". Traditionally pumpkin is not used but I have added it here for variety. Instead of pumpkin you could add butter beans (from a can, drained) in centre of pan for some plant protein!

Tired of eating steamed or roast veggies? Try cooking veggies the Mediterranean way...in a tomato salsa (also known as sofrito). 

The nutrients/antioxidants are better absorbed from vegies when cooked this way. I cooked cauliflower and peas this way tonight.

Not sure what else to do with cabbage apart from coleslaw? Try cooking it! My super easy and tasty recipe. The dill makes it taste so fresh. I also love dill on steamed/cooked vegies dressed with lemon, a little dijonaise and EV olive oil.
